Cakes are always a sweet delight to people of all ages, especially kids. We are sharing a quick and simple yet very delicious cake recipe. Don’t worry if you don’t have an oven, you can bake this perfect cake in a cooker too. So, why wait, let’s learn the recipe quickly and make yummy plum cake for our kids.
All-purpose flour / Maida -1 cup
Powdered sugar – 1cup
Melted butter – 1/2 cup
Eggs whole – 2
Cinnamon – 2 small sticks
Clove – 3
Cardamom – 2
Dry ginger – 1/4 inch
Vanilla essence/ extract – 1tsp (optional)
Crushed cashews – 10-15
Chopped raisins and tutti fruity – as needed.
Baking powder – 1 tsp
Baking soda -1 tsp
Soak the crushed raisins, tutti fruity and cashews in a small bowl of wine overnight for best flavor. Dry roast cinnamon, cardamom, cloves and dry ginger on low flame in a pan, powder it and keep aside.
Take a big bowl and whisk two whole eggs until it foams sufficiently. To this, add powdered sugar and mix well. Add melted butter and mix until the batter is smooth. Add roasted spice powder and pre-soaked raisins, nuts, onetsp vanilla extract and stir well. Add baking soda and baking powder too. Now add all-purpose flour in increments and mix the batter in cut and fold method. Avoid too much mixing at this stage.
Meanwhile take a pan and add 4 tbsp. of sugar and 1 tsp water. Allow the sugar to melt and caramelize. Add this to the prepared cake batter and give it a stir. Caramel gives perfect color to the cake. Transfer the entire mix into a pre greased baking tray or large bowl. Tap it for the mix to settle evenly.
For baking the cake without oven, add salt or refined sand to layer the bottom of pressure cooker. Remove the gaskette and close the lid and pre heat the cooker on high flame for 10 min. Now transfer the baking tray with cake mix into the cooker, turn the heat to medium flame for 15 min and further simmer to low flame to another 30 min.
You can check if the cake is completely baked by inserting a tooth pick and if it comes out clean without any residue it means that your cake is ready. Turn off the flame, allow the cake to cool, and slice it.
Delightful yummy yummy plum cake is ready to serve. You can also further top it up with chocolate sauce or fresh whipped cream as desired.
